Use the rate you actually charge at that address. Rates differ by state, by county and sometimes by city, and taking one off the internet for the wrong jurisdiction is how a filing goes wrong. Your accountant or your state revenue site is the right source, not a calculator page.

Does it know my local rate?
No, on purpose. Rates change by jurisdiction and by date, and a wrong rate that looks official is worse than no rate. Use the one you are registered to charge.
What does backing out tax mean?
A customer hands you a total that already includes tax and you need to know the part that is really yours. This splits it into the amount before tax and the tax itself.
Is labor taxable?
It depends on the state or province and on the kind of work. Some tax labor, some tax only materials, and some tax neither on a repair. Ask your accountant rather than a web page.
How does the product handle this?
The rate sits on the property, so the right address gets the right rate, and each rate is shown as its own line on the document. Once the document is sent, the totals never recalculate.
